Summer Chicken Salad With Garden Herbs

The ingredients are one 3-1/2 pound whole chicken, 1/4 cup chopped fresh chives, three tablespoons of white or red wine vinegar, two tablespoons of capers, two tablespoons of thyme, one teaspoon of oregano, four teaspoons of extra virgin olive oil, 1/2 teaspoon salt, 1/2 teaspoon of fresh ground pepper and two cloves of garlic, minced.
Once you have gathered all the ingredients, you just follow the instructions to make your salad. It's very easy.
First, you cook the chicken by putting it in a Crockpot covered with water and bring it to a boil. If you don't have a Crockpot, a large pot will do just fine. Simmer the chicken for 50 minutes or until it is tender. Drain the broth. Cool the chicken completely and then remove the skin and take the pieces of chicken off of the bone.
Chop them into bite-sized pieces. Combine the other ingredients in a bowl. Add the pieces of chicken and toss everything together to coat the chicken well. You can then eat it by itself, add to lettuce to make it a salad, or eat it on bread as a chicken salad sandwich. This recipe is wonderful as not only is it delicious, but it's easy, nutritious, and high in protein so you get energy when eating it which is great for kids in the summertime!
